Josh's Birthday






We celebrated Josh's birthday with just the family. The weather has just been crazy this winter. A lot of snow. So, I made him a luscious chocolate cake with a fluffy, mocha frosting. It was a huge hit. I must say, I had several pieces!!! Delicious and no need for ice cream. If you are interested, here goes! Enjoy!



Delicious Chocolate Cake w/ Fluffy Mocha Frosting

1/4 C. Coconut oil
1/2 C. Unsweetened Applesauce
1 2/3 C. Sugar
2 Eggs
2 1/4 C. Rice flour
2/3 C. Baking Cocoa
3/4 tsp. Baking soda
1/2 tsp. Cream of Tartar
1 tsp. Salt
1 1/4 C. Water
1 C. Semisweet Chocolate Chips (Enjoy Life brand)
In a large bowl, beat coconut oil and sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Beat in applesauce. Combine the flour, cocoa, baking soda, cream of tartar, and salt. Add to the sugar mixture alternately with water, beating well after each addition. Fold in chips. Pour into a 13-in. x 9-in. baking pan coated with canola oil. Bake at 350 degrees for 35 minutes or until toothpick inserted near the center comes out clean. Cool on wire rack.


Fluffy Mocha Frosting:
2/3 C. Sugar
3 Tbsp Strong Coffee
1/4 C. Pure Maple Syrup
1/4 C. Honey
2 Egg Whites
1/4 tsp. Cream of Tartar
1/8 tsp. Salt
In a double boiler over rapidly boiling water, place all the ingredients in pan. Whip with rotary beaters until frosting reaches stiff peaks. Remove from heat. Frost cooled cake.
